Oatmeal Bake

On Mondays I meal prep, and this oatmeal bake has become a staple on the meal prep menu for breakfast. Its quick, easy, and tasty. You can most likely make it with what you have in the pantry.

I mix up the fruit, sometimes blueberries and peaches, sometimes a berry medley. Use whatever fruit you prefer, just make sure it’s cut up into bite sized pieces.

Ingredients:

  • 3 cups old fashioned oats
  • 1/4 cup almonds chopped
  • 1/4 cup coconut sugar
  • 1 tbsp of brown sugar
  • 1 tsp of cinnamon
  • 1 tsp of baking powder
  • sprinkle of salt
  • 1 1/2 cups frozen blueberries or any fruit
  • 3 eggs
  • 1 1/2 cups unsweetened almond milk
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla

Mix wet and dry ingredients separately, then combined. Fold in 1 1/2 cups of fruit. Don’t over mix. Pour into a greased 8×8 baking dish. Bake at 350 for 40 minutes. Store in fridge. Enjoy

Peaches- I’ve tried both frozen and canned. I think the unsweetened canned peaches have more flavor, add 1 tbsp of the liquid for an extra zing of peach flavor!

When it’s fresh I eat the oatmeal bake as more of a casserole. Then day 2-however long it last, I cut them into bars and eat it cold.

If you prefer them warm, put a serving into a bowl mash it up a lil, add a bit of almond milk and microwave for 1 minute.
